Cuvee NOS Pinot Noir 2020

Crafted using hand-picked grapes from three separate appellations, the NOS gives a true expression of Pinot Noir. A bouquet of sweet cherry fruit and subtle spice seduces, while the concentrated palate delights with smooth tannins and a precise and mineral finish. Try it with roast lamb or tomato-based dishes.

The grapes are from 3 different sites in the Cape South Coast Region including, Elgin, Elands Kloof and the Hemel-en-Aarde. All grapes are organically grown with minimum intervention. Soil variety is shale, sandstone and clay, giving great complexity and structure.

harvest statistics

The grapes were harvested at 22.5 Balling in the first week of March. All grapes were handpicked in the early morning during cooler weather, placed into lug boxes and transported back to the cellar for processing.

vinification

The grapes got picked at the perfect sugar level to ensure good pH and acidity with good structure and aromas. No oxidation was allowed before ferment. The grapes were fermented 100% whole bunch, crushed, with one punch down daily. The wine fermented warm at 30 degrees for about 10 days and then spent another 22 days “post ferment” on the skins for tannin integration. Ageing was done for 11 months on the gross lees in old French oak Foudre 2000L, after which the wine was blended and bottled in April 2021. No filtering, fining or SO2 was added.
